Here on this sunny Wednesday I´m cooking my favourite meat dish, listening to Agnetha Fältskog´s new music, Agnetha is really putting my socks to roll with the song "Dance the pain away", perfect music for spring and summer time and Agnetha´s voice is still the same as it was in the eighties. I think a voice never gets old. Recipe of the week "Gorgonzola meat Islands". Try if you dare!
Sofia´s gorgonzola meat islands in a creamy sea
100g Speck (non fat bacon)
500-800g porsaan sisäfilettä/ filet of pork
5 dl/ 2,1 cups light cream
4 rkl/ tblsp soy sauce
4 rkl/ tblsp good quality balsamico
Cut filets in small pieces, like medallions. Fry quickly in a pan on both sides. Salt and pepper. Cut the speck in small pieces and fry quickly in the pan. Cut Gorgonzola as well and place the bites on the meat. Pour over the sauce and up in the oven, 200 degrees/ 400F for about 25 minutes. I serve rice with it and cooked vegetables. Serve what you like!
