I´m always searching for new recipes, I´m a real "recipe hunter", not one day that I wouldn´t look for recipes in the net, in magazines or books. Searching for inspiration, something new. I found this recipe yesterday morning and it was on the plate at 3 pm when kids came home from school. Some recipes, they just land in the dustbin, others they will be placed in my fat recipe book (read treasure). This is worth trying, that´s why I share it with all of you, lovely readers. Take it!
Chicken Balls with cold Gremolata sauce
6 chicken breasts
3 carrots (cut in small pieces)
1 onion and garlic (chopped)
1 egg
salt, black pepper, parsley
Put the breasts in a mixer, carrots and onion, carlic cloves as well. Add one egg, salt, pepper and chopped parsley. Form into balls or bigger, flat balls like I did!
Cold Sauce "Gremolata"
1 dl (0,5 cup) natural yoghurt
1 dl (0,5 cup) sour cream
grated zest fom one lemon (the whole!)
garlic (I took 2 cloves)
a lot of parsley ( I use deep frozen, already chopped, super product!)
salt and black pepper
Mix everything, let it rest for an hour if you have time, to let the taste settle!
