Let us eat healthy when bacterias and flus are haunting us behind every corner at the moment. This extremely healthy lentil soup is a recipe of my own. You need the ingredients shown on the picture above, one litre ecological vegetable broth and lemon juice. I love red lentils as they contain for our bodies very important antioxidants.
Sofia´s Red Lentil Soup
2 dl/ 0,8 cup red lentils
1 can of crushed tomatoes
one pepper, take the colour that makes you happy
1-1,5 litre vegetable broth
lemon juice, black pepper
Stir the vegetables lightly in oil, add crushed tomatoes and broth. Let it cook gently until soft. Mix with the mixer until even and smooth.
