Step Back in Time

Muistatteko vielä miltä lapset näyttivät pieninä? Miten sydän lämpeneekään kun katselen vanhoja kuvia lasten eri vaiheista, ihanat pikku mussukkapallerot! Miten voisinkaan saada pitää näitä pieniä ihmisiä vielä kerran sylissä ja upottaa nenän valkoisiin hiuksiin ja silittää pieniä pulleita sormia. Olisin pitänyt laittaa lapset pienenä lasipurkkiin ja kansi tiukasti kiinni, niinkuin äiti aina kehotti tekemään.
Can you still remember how your children looked like when they were small? How can my heart get so warm when I look at old pics, my sweet tiny dwarves. Let me put my nose in that white, soft hair and hold those tiny fingers between my own, just once again. I should have listened to my mum, she told me to put the kids in a big glass jar and close it with a lid. Tightly.

MMB=Monday Marzipan Buns

Viikkoon en ole ehtinyt leipoa yhtään mitään, töissä olen viettänyt kuusi päivää ja tänään alkoi vapaat päivät. Jos en ole leiponut pitkään aikaan alkavat vieroitusoireet iskemään, ihan sama juttu jos iltapäiväkahvi jää juomatta. Pernillan herkkukirjasta napsin tämän päivän pullareseptin, ihanan mehevät ja kosteat marsipaani-kanelipullat. Tästä Pernillan kirjasta taitaa tulla mun leivontabiibeli. Vaikka et olisi marsipaanin ystävä, niin tässä ei marsipaani juuri ollenkaan maistu, ihan vain pikkuriikkisen.
I haven´t been baking for over a week and I get the same feeling as when I would have left my daily cup of coffee out. Been working for six days and baking was something I could only dream about, but today I baked Marzipan cinnamon buns, very juicy and soft buns, something to cheer up this grey snowy/rainy Monday. The taste of marzipan is very mild, even If you aren´t a friend of marzipan, you can eat these without even noticing! Recipe is from my new favourite baking bible "Pernillas Praliner".


Marzipan cinnamon buns

Puolen litran pullataikina. 1/2 litre bun dough.

Täyte/ Filling:

100g marzipan
150 g butter
1,5 rkl/tblsp cinnamon
1,5 dl/0,6 cup sugar
3 rkl/ tblsp korppujauhoja/breadcrumbs
1 rkl/tblsp water

Mix everything with a fork. I used my hands. Bake in 200 degrees, 400F until golden brown.

It Smells Like India

Intialainen ruoka on ihanaa ja yritän vangita ruokiin sen herkullisen maun, joka jää kielelle kun intialaisesta tai nepalilaisesta ravintolasta astuu ulos. Tämä resepti tulee aika lähelle. "Kotona tuoksuu Intia!", huusin kun tulin illalla zumbasta kotiin. Onneksi kattilaan jäi vielä yhden annoksen verran, niin voin piipahtaa meluisassa ja kaoottisessa Intiassa kun tulen huomenna töistä kotiin.

I don´t think I know anyone who doesn´t like Indian or Nepalese food. I have been trying to capture the real Indian taste by searching for Indian recipes and this one comes rather close. "It smells like India!", I shouted when I came home from zumba in the evening. Easy to cook and easy to eat. Makes even a kid happy.
Chicken Tikka Masala

Marinade:
4-5 chicken breasts cut in small pieces
5-6 rkl/ tblsp Tikka Masala paste (medium)
4 rkl/ tblsp natural yoghurt
Leave for some hours in the fridge, or the whole night.

Sauce:
500 ml paseerattua tomaattia/ strained tomatoes
2 dl/ 0,8 cups heavy cream
5 cm raastettua inkivääriä/ grated ginger
a lot of garlic
1 tsp brown sugar
lemon juice of half a lemon
salt and pepper
chili powder (watch out!)

Let the sauce cook slowly for 15 minutes. Preheat the oven to 250 degrees. Take out the chicken from the fridge and put it in the oven on the highest level for 5-10 minutes. Pour the chicken in the sauce. Basmati rice and cooked vegetables to go and your lunch or dinner will be just perfect.

Mountains and Burgers

Aamupäivän raikas kävelylenkki. Välillä unohdan katsella vuoria. Tänään muistin. Pitkästä aikaa yöllä olikin satanut lunta. Luulin jo kevään saapuneen. Hampurilaisherkkua iltapäivällä. Tällaista perjantaifiilistä.
The snow came back during the night. Thought spring had already arrived, but I was wrong. Took a long walk in the morning. Sometimes I forget to look at the mountains. Today I didn´t. Hamburgers after school. A little bit of a Friday feeling.

Running on Tiptoes


Yleensä pidän pienen juoksutauon tähän aikaan vuodesta ja jumppaan kotona ja käyn zumbassa, mutta tänä vuonna jatkan juoksemista, en pysty lopettamaan. Aamulla plus kaksi astetta ja aurinko nousee vuorten takana. Tossujen alla narskuvat murskaantunut jää ja pikkukivet. Talvella juoksen hitaammin kuin muuten. Pari juoksijaa tulee vastaan, kaikki juoksevat samalla tavalla, varovasti tipsutellen. Katse kohtaa, hymyillyttää ja me tiedetään, että juoksijaa ei estä mikään.


Usually I keep a short break from running at this time of the year, but this mild winter has kept me going on. This morning the best conditions, sun is raising behind the mountains, plus two degrees. Shoes running on crushed ice and tiny stones. In winter I tend to run slower. I meet two fellow runners and we are all like walking on our tiptoes in order not to fall on the slippery path. I meet their eyes, we smile and we know and we understand, that nothing can keep us from running.

Cake Like a Big Cinnamon Bun

Sain siskolta jouluksi ihanan herkkuleivontakirjan "Pernillas Praliner". Olin nuoren Pernilla Wahlgren fani ja tykkään Pernillasta vieläkin, hän on vieläkin 45-vuotiaana erittäin sädehtiväinen ja tyttömäinen ja jotenkin ikuinen ilopilleri, vaikka neljän lapsen yksinhuoltajana ei varmaan aina ole ollutkaan niin helppoa. Meillä onkin jotakin yhteistä, sillä Pernilla leipoo monta kertaa viikossa ja kehittelee omiakin kakkuja. Tämäkin kakku on syntynyt sattumalta kun pullien leipomiseen ei ollut aikaa, kertoo Pernilla kirjassaan. Ihanan maukas kakku kaikille kahvikissoille!


If you don´t have time to bake traditional cinnamon buns, this cake will bring you further than half away and the taste is as delicious as a home made bun. A quick way to get something good for coffee, just make sure you have sour cream at home, that´s the secret for its extremely soft texture.This easy recipe is from the Swedish artist Pernilla Wahlgren´s baking book "Pernillas Praliner".
 
Pernillas enkla kanelbullesockerkaka

175 g smör/butter
2,5 dl socker/ 1 cup sugar (vispas, mix together until fluffy and white)

Blanda ner, add:
2 ägg/ 2 eggs
3 dl gräddfil/1,3 cups sour cream
4,5 dl mjöl/1,9 cups flour
2 tsk vaniljsocker/ 2 tsp vanilla sugar
1 msk(ruokalusikallinen) bakpulver/ 1 tblsp baking powder
salt

Fyllning: 1 dl socker och 3 msk (ruokalusikallista) Kanel blandas.

Filling: 0,4 cup sugar and 3 tblsp cinnamon (mix).

Häll hälften av smeten i kakformen, strö över hälften av kanelsockret och resten av smeten ovanpa. Toppa med resten av kanelsockret och lite smör. Grädda i 175 grader, 45 minuter.

Pour half of the dough in a cake form and pour over half of the sugarcinnamon filling, then pour rest of the dough and on the top rest of the cinnamonsugar. Add a little bit of butter on the top if you like. 175 degrees, 45 minutes.

Khaled and Sarah

Liian kauan ollaan odotettu Khaled Hosseinin kolmatta kirjaa ja nyt vihdoinkin keväällä ilmestyy "And the mountains echoed", kolmas henkeäsalpaava ja koskettava tarina Afghanistanista. Nämä Hosseinin kirjat ovat kuin kultakimpaleita kirjahyllyssä. Sellaisia karuja mutta silti kauniita tarinoita. Khaledin kirjoittamat tarinat ovat aikuisten satuja, mutta hyvin realistisia sellaisia.

Jos et ole vielä lukenut "Leijapoikaa" tai "Tuhat loistavaa aurinkoa" niin kipin kapin kirjakauppaan. Ja kyllä mieskin on kultakimpale, joka tekee kirjoista vielä mielenkiintoisempia.
We have been waiting far too long for Khaled Hosseini´s third book "And the mountains echoed", another thrilling, stunning and touching story taking place in his former home country Afghanistan. If you haven´t read his books "The kite runner" or "Thousand splendid suns", I suggest you should.


Ja yhtä kauan ollaan odotettu Sarah Brightmanin uutta studioalbumia, joka ilmestyy myös keväällä, "The dream chaser", Sarah laulaa avaruudesta ja laulaakin meidät kaikki tähtiin ja kaukaisiin galaxeihin ihanalla äänellään.
And we have been waiting far too long for Sarah Brightman´s new studioalbum "The dream chaser" which is to be released also this spring. Space is the main theme for this album and surely she will sing us to the moon, stars and far away galaxies.



Looking forward to spring when I can finally have these two masterpieces in my hands.

Goodbye and Welcome

Ainakin kerran vuodessa on hyvä pysähtyä miettimään mitä viime kahdentoista kuukauden aikana tapahtuikaan. Joku nukahti pois ja toinen pieni ihminen syntyi. Samantekevää on, mitä on tullut hankittua tai missä maissa on käynyt. Tärkeintä on se hyvä olo ja tyytyväisyys. Lapset ovat onnellisia ja kotona on rauha. Uudelta vuodelta en toivo muuta kuin että saan juosta ja zumbata, kokata ja leipoa, olla lasten kanssa ja että meillä kaikilla on hyvä olla. Niin yksinkertaista.

 Ostin itselleni vuoden viimeisen kukkakimpun. Uusi vuosi on hyvä toivoa tervetulleeksi kukkien kera. Last flower for this year, a new year is good to be welcomed with fresh flowers.

At least once a year it´s important to reflect on the year that is passing and look forward to the new one to come. Someone in the family past away and a new member was born. It doesn´t matter what you bought or which countries you visited, the most important thing is the good, happy feeling inside. As long as I can run, bake and cook, our home is a peaceful place and the kids are happy human beings, I´m satisfied. It´s as simple as this.

Kaiserschmarrn

Ennen vanhaan Kaiserschmarrn oli köyhien ihmisten ruoka ja sehän sopii nyt hyvin, kun lompakko on kuihtunut jouluostoksien jälkeen. Kaiserschmarrn on itävaltalaisten lempiruoka, jota syödään sekä pää- että jälkiruokana. Meillä syödään tätä yleensä iltaisin. Minulle maistuu parhaiten itävaltalaisen luumukastikken kera, paljon rusinoita ja tomusokeria. Lapsille ilman rusinoita ja nutella on the top.

Valkuiaset vatkataan erikseen ja lisätään lopussa taikinaan. Taikina paisuu pannulla ja puulastalla tehdään pieniä paloja ja käännetään. Kokeilkaa tätä kotona, niin saatte vähän alppifiilistä, ei se ole yhtään monimutkaista ja tuo vähän vaihtelua lätyille.
In former times Kiserschmarrn was a dish of poor people. This is fine, since our wallets are nearly empty after Christmas time. Austrians favourite dish should be eaten as a main dish or as a dessert or like we do, as an "evening treat". I like it with Austrian plum sauce or apple sauce, my kids of course with nutella on the top.

Egg whites are to be whipped separately and added in the end. In the pan make small pieces with a wooden fork and until golden. Try this at home and get the feeling from a small cottage on the top of the mountain. It´s not difficult at all.
Kaiserschmarrn

For 4 persons you need:

4 eggs
3 tblsp sugar
1/2 tsp salt
375 ml milk
250 g flour
Raisins if you like
butter, powdered sugar

Mix dots with salt, 2 tablespoons sugar and milk. Gradually add flour to the milk. If you have time, let it rest for 1-2 hours. Mix the egg whites and add 1 tablespoon sugar in the end and mix until white and shiny. Add before fying. Sofia adds 1 tablespoon vanilla sugar in the beginning. If you are a vanilla lover, do it as well. Fry in a pan on both sides until golden and make small pieces with a wooden fork. Bon appetit!

Arabian Christmas Cake


Ei joulua ilman arabialaista joulukakkua. Pelkkä tuoksu tuo joulun mukanaan. Oikeastaan en aikonut leipoa tätä kakkua tänä jouluna, mutta tässä se nyt on, jo puolisyötynä pöydällä. Pari joulua sitten leivoin kuusi kappaletta ja annoin ystäville lahjaksi.

Tämän kakun myötä suljetaan joululeipomo vähäksi aikaa. Ensi viikolla keittiö muuttuu terveyspajaksi missä smoothiekone käy kuumana ja kasvisruoat muhivat uunissa. SporttiSofia astuu taas remmiin ja laiskottelut loppuvat. Mutta kyllä talvella väsyttää, mistä sen reippaan kipinän taas onkisi?
Not a Christmas without the Arabian Christmas cake. I really thought about skipping this cake this Christmas but traditions are traditions and somehow you keep on holding on to them. Couple of years ago I baked six cakes and gave them to friends as presents.

With this cake we say goodbye to our Christmas bakery and close it for a while. Next week our kitchen will turn into a helth corner where smoothies and vegetarian dishes will be served. Sporty weeks are ahead of me. Are you also so tired and without energy? Wher can you get the energetic spark again, let me know!
Arabian Christmas Cake

200 g butter
3, 5 dl /1,5 cups sugar (mix until fluffy and white)

3 eggs (add the eggs)

5 dl /2, 1 cups flour
1/4 tsp baking powder
1/2 tsp baking soda
1 tsp salt
3/4 tsp muscat nut powder
1 tsp cinnamon
3 rkl / 3 tblsp cocoa powder (real one, not with sugar)
1/2 tsp ground cardamom
1 tsp vanilla sugar
grated zest of half a lemon and juice of it
2 dl / 0.85 cup cream (add the ingredients above to the egg- and butter mixture)

175 degrees / 345F, one hour.

Icing:

100g butter (melted)
200g powdered sugar
1 egg yolk
1/2 tsp cinnamon
2 tblsp cocoa powder
2 tblsp coffee

Mix everything and bring it to a boil. Pour over.
